Hot Water: Use a double portion of tea leaves, about two teaspoons (five to six grams) for every eight ounces of water. Bring water to a boil, pour over tea leaves and allow to steep four to five minutes. Remove the tea leaves and store the tea at room temperature. If refrigerated, the tea may turn cloudy.

Sun Tea: In a two quart covered jar, place one ounce of tea. Fill the jar with cold water and place in the sun for three hours. Strain and serve. Sun tea can be kept in the refrigerator because it will never turn cloudy.
